Beet Brownies

I know, beet brownies sounds unappetizing, but trust me on this one! You can taste the beets only slightly, and you can make the taste more or less strong depending on how many beets you add. For me, I don’t mind the beet taste because I love beets. The food in my dining halls sucked freshman year, and I would always add beets to my salad. To think that they could be an ingredient in brownies was beyond me at that time.

Beets have great health benefits, too! They are full of fiber, folate, and vitamin C, and contain nitrates which can help to lower blood pressure.

My friend, Vivian, shared this recipe with me! These brownies are super simple to make–all you need is a blender and pan! They’re moist and oh-so-chocolatey!

I tried making them with cacao powder instead of cocoa powder, but that made the chocolate taste a tad too bitter, so I recommend sticking with regular cocoa powder.

For the beets, it is easiest to use canned beets (just make sure they aren’t soaked in sugar) or pre-steamed/peeled beets. I used Trader Joe’s steamed and peeled baby beets.

Beet Brownies

Servings: 12

Ingredients:

  • 1/4 cup buckwheat flour
  • 1/4 cup almond flour
  • 3 tbsp almond butter
  • 1 1/4 cups coconut sugar
  • 1/2 cup cocoa powder
  • 2 eggs
  • 1/2 cup beets (canned or steamed/peeled)
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat oven to 350ºF.
  2. Combine all ingredients, except chocolate chips, in a blender.
  3. Spoon into a baking pan and stir in chocolate chips.
  4. Bake for 20 minutes or until desired consistency. I like to take them out when they are still a tad gooey.
