There’s so many vegan ice creams available at the grocery store nowadays, but did you know you could make your own at home?! With just 3 simple ingredients (bananas, matcha, coconut milk) you can whip up a light, dairy-free dessert in 5 minutes! Minus the freezer time. This recipe is very customizable–the main ingredient is frozen bananas. You can add cocoa powder, peanut butter, strawberries, or whatever you’d like!

I have to admit, this doesn’t taste exactly like ice cream–it tastes more like bananas–but it’s still a frozen treat with the same texture. Just think of a smoothie, but frozen! The matcha flavor is not too over-powering and goes well with the banana flavor.

Matcha Benefits

Matcha has many benefits! First of all, matcha powder includes the whole green tea leaf ground up, wheras green tea only has part of the leaf because it is steeped. Matcha is full of antioxidants, meaning it protects your cells from becoming damaged. Not only does it lower blood pressure and help with inflammation– matcha also helps lower cholesterol and protects against cancer.

Matcha does contain caffeine, so it can keep you awake or jumpstart your day!

Vegan Matcha Nice Cream

Ingredients:

  • 3 frozen bananas
  • 1 tbsp coconut cream
  • 2 tsp matcha

Instructions:

  1. Slice and freeze 3 ripe bananas overnight.
  2. Blend frozen bananas, coconut cream, and matcha together until smooth in a blender or food processor. Scrape down the sides as needed.
  3. Serve immdeitaely, or freeze.
