No Bake Matcha Energy Balls

My no bake matcha energy balls are the perfect snack for when you are craving something sweet. These balls are low-sodium and each one has 4 grams of protein!

This recipe is super customizable after you have your base. The dates act as your “glue” and the nuts are your base, as opposed to many recipes that use oats–this recipe is also grain-free! I chose to add chia seeds, unsweetened coconut, and cacao nibs and use mumu matcha powdwer!

Cacao nibs are raw and contain fiber, fat, protein, and antioxidants.

This is the consistency you want your mixture to be.

Next, add your mix-ins. I used chia seeds, unsweetened shredded coconut, and cacao nibs. You can put dried fruit, extracts (almond, coconut), nut butter, etc.

You can mix the ingredients either with your hands or a spatula. Roll into balls about the size of a golf ball. I rolled them in coconut to add some texture to the outside. These don’t need refrigeration because there are no ingredients that will spoil, but if you prefer your energy balls cold, feel free to refrigerate them.

I thought these balls had the perfect chewiness, and the matcha taste is not too overpowering. You can taste them throughout and add more matcha if you feel it needs more. I really like the combination of pistachios and cashews because pistachios are my favorite nut!

Matcha Energy Balls

Ingredients:

  • 1/2 cup cashews
  • 1/2 cup shelled pistachios
  • 20 dates, pitted
  • 1/2 tbsp coconut oil
  • 2 tsp matcha powder
  • 1 tbsp chia seeds
  • 1/4 cup unsweetened, shredded coconut (plus more for coating)
  • 1/8 cup cacao nibs

Instructions:

  1. Blend cashews pistachios, dates, coconut oil, and matcha powder in a blender until sticky and moldable.
  2. Transfer to a bowl and stir in chia seeds, coconut, and cacao nibs either with a spatula or your hands.
  3. Form into bite-size balls (a little more than a tablespoon size)
  4. Store in fridge.
