Chia pudding is a super quick, easy, and healthy breakfast. It's perfect to meal prep ahead of time so you can grab it on the go. Layer chia pudding with yogurt, bananas, and granola and you have yourself a meal that will keep you full until lunch!

About Turmeric

Not only does the turmeric add a pop of yellow color, it also has many health benefits: anti-inflammatory compound, lowers risk of heart disease. Turmeric has the potential to prevent cancer and Alzheimer’s. The active compound in turmeric is curcumin which contains medicinal properties, but is only present in small amounts in turmeric. India has used turmeric for many years and it has only recently gained popularity in the United States. My favorite way to use turmeric is making Skinny Taste’s turmeric roasted cauliflower.

Chia Parfait

I made chia pudding with Trader Joe’s Turmeric Ginger Coconut Beverage. My favorite ratio for chia pudding is 1tbsp chia seeds : 1/4 cup liquid. This turmeric beverage makes a flavorful chia pudding and you don’t have to worry about mixing in your own turmeric spice. But, turmeric does not taste good with certain fruits. I’ve found that bananas, apples, raspberries, and coconut chips go best with turmeric.

I layered my chia pudding with Forager’s Unsweetened Cashewgurt. It is organic and dairy-free and the consistency is like normal yogurt. However, it does not taste like much so I just find it adds a nice, smooth texture to the parfait. Feel free to substitute with any yogurt of your choice (I would use Greek Yogurt because it is very creamy and high in protein, but I’m lactose-intolerant).

Lastly, I added Bee Free Gluten Free Bakery’s Mae’s Apple Pie Warrior Mix. It tastes and smells just like apple pie! This is a soft, chewy granola that is, you guessed it, gluten-free! It is also grain, soy and dairy free, plant-based, and free of refined sugars–it’s actually paleo, as it is low in sugar.

I love finding gluten-free alternatives for foods that normally contain gluten that I used to enjoy. You may not know it but many granolas are not gluten-free. I’ve gone to countless smoothie bowl places who have told me their granolas are not gluten-free and it makes me sad because, honestly, that’s the best part! Ingredients:

Chia Pudding

  • 3tbsp chia seeds
  • 3/4 cup turmeric ginger coconut beverage
  • 1 cup of cashewgurt (or any yogurt of your liking)
  • 1/2 banana, sliced
  • 1/3 apple, chopped
  • 1/4 cup Bee Free Apple Pie Warrior Mix (or any granola you prefer)

Instructions:

  1. Prepare chia pudding: stir chia seeds and beverage in a sealable container. Place in fridge overnight.
  2. Stir chia pudding to free up clumps. Layer with cashewgurt, bananas, apples, and Bee Free Apple Pie Warrior Mix.
