Salmon, Broccoli, and Asparagus Quick Sheet Pan Dinner

All I have to do is prep the veggies, toss the salmon on there and pop it in the oven! I don’t have to worry about standing over the stove cooking, and, trust me, those extra 15 minutes are essential for a busy college student. While my dinner is in the oven, I can catch up on Instagram, study, read or even take a cat nap.

Farmed vs. Wild Salmon

Farmed salmon are fed a diet of soy, fish oil, small, fish, and genetically modified yeast. By consuming farmed salmon, you ingest what they eat as well, making farmed salmon less nutritious. Additionally, farmed salmon have higher levels of omega-6 fatty acids which can cause inflammation. They live in tight quarters, so they are more likely to get sick from fecal matter and uneaten food. Then comes the use of antibiotics to treat these fish which can lead to antibiotic-resistant bacteria. All around, wild caught salmon is a much better option both for environmental and health reasons.

I was skeptical whether or not this frozen, packaged, salmon would taste as good as fresh salmon, and I honestly thought it tasted better than the usual farmed salmon I get from the grocery store. It was flaky, succulent, and flavorful!

Salmon Nutrition

With 19g of protein, this salmon helps you meet your protein dietary needs whether you are pescatarian, flexitarian, or an omnivore. If you are looking to reduce your carbon footprint, or simply to eat less meat, choosing fish is a great option!

Salmon is also a good source of healthy fats (omega-3 fatty acids) and potassium. One of these filets is just 100 calories and is low in sodium (310mg). I always look at nutrition facts and ingredients lists before purchasing a product.

Sheet Pan Recipe Method

The ingredients you’ll need are broccoli, asparagus, salt, pepper, olive oil, chile lime seasoning (optional) and Gorton’s Natural Catch Grilled Salmon. This recipe also works with fresh salmon–it’s about the same cook time.

My favorite way to prepare vegetables is by roasting them. I love how crisp the broccoli gets–it almost dissolves in your mouth. My secret seasoning combo for broccoli is salt, pepper, and some of Trader Joe’s chili lime seasoning for a bit of a kick. I also added asparagus seasoned with salt and pepper and drizzled with olive oil. I placed the salmon in the middle of the sheet pan with a sliced lemon on top and placed it in the oven at 400ºF for 15 minutes.

Salmon, Broccoli, and Asparagus Quick Sheet Pan Dinner

Servings: 2

Ingredients:

  • 1 Package of Gorton's Natural Catch Grilled Salmon or 2 salmon filets
  • 1 head of broccoli
  • 8 pieces of asparagus
  • 4 tbsp olive oil
  • chile lime seasoning (optional)
  • salt and pepper
  • 2 lemon slices

Instructions:

  1. Preheat oven to 400ºF and line a sheet pan with foil or a baking mat.
  2. Cut broccoli and toss with 2 tbsp olive oil, salt, pepper, and chile lime seasoning. Toss asparagus with 2 tbsp olive oil, salt, and pepper.
  3. Arrange broccoli, asparagus and salmon on sheet pan. Place a lemon slice on each piece of salmon.
  4. Cook in oven for 15–17 minutes. Check with a fork to see if salmon is fully cooked and to make sure the broccoli is tender.
