Almond Butter Cookies (5 Ingredients!)

Are you or a family member allergic to peanuts? In my family, my sister is allergic to peanuts, so I never bake with peanut butter. I found myself missing the classic soft, moist peanut butter cookie we all know and love, so I decided to make an almond butter version! These 5-ingredient almond butter cookies are gluten-free, dairy-free, and vegan, too!

I used PBfit’s new protein almond butter spread–it has 28% more protein than regular almond butter and contains no palm oil. The texture is very smooth, and it flows easily, making it easy to stir the ingredients together for this recipe.

This recipe comes together in under 20 minutes with just 5 ingredients: almond butter, coconut flour, almond flour, maple syrup, and baking powder! You can use all almond flour if you don’t have coconut flour–I know it’s not a very common ingredient.

Almond Butter Cookies (5 Ingredients!)

Servings: 10 cookies

Ingredients:

  • 1/2 cup almond butter
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup
  • 1/2 tsp baking powder

Instructions:

  1. Preheat oven to 350º and place a baking mat or parchment paper on a baking sheet.
  2. Combine all ingredients in a bowl.
  3. Roll into 1-inch balls and place on baking sheet.
  4. Press down with a fork and make criss-cross pattern.
  5. Bake for about 8 minutes. Enjoy!
