Coconut Cacao Date Rolls

Have you ever seen those packaged date rolls at the grocery store next to all the dried fruits? Well, if you’ve been buying them, you’re wasting your money. After checking the ingredients list (which just consists of dates and coconut flakes) I set out to make my own! They are super simple–all you need are dates and a blender! The blender breaks them down into a paste, and all you have to do is form them into a log shape and roll them in toppings, like coconut flakes or cacao nibs. I even dipped some in melted dark chocolate!

I used Joolie’s Dates–they’re a local California grower based out of the Coachella valley! Their dates are organic, handpicked and oh-so-sweet! I love supporting local and sustainable farms! You can find them on amazon and thrive market or at a grocery store near you!

Let’s talk about the health benefits of dates! Dates are the perfect snack or treat to satisfy your sweet tooth because they are naturally very sweet with a low glycemic index, meaning the levels of glucose in your blood rise slower, than say, when you consume ice cream or a cupcake. Dates are also a good source of fiber, magnesium, and copper.

Date are chewy and rich and can be used for many healthy recipes. Try adding them to a smoothie, using them as an ingredient for gluten-free pie crust or blending them to form energy balls!

Make sure to take out the pits if you buy whole dates; you can also purchase a pitted version.

Coconut Cacao Date Rolls

Servings: 12

Ingredients:

  • 14 dates, pitted
  • coconut flakes
  • cacao nibs
  • dark chocolate, optional

Instructions:

  1. If you have whole dates, make sure to pit them. Then blend your dates together in a food processor until smooth.
  2. Remove date paste and form into a log shape.
  3. Place in the refrigerator for 10 minutes, so they are easier to work with. Then roll the date logs in coconut flakes and cacao nibs.
  4. If you want chocolate-covered date rolls, refirgerate date rolls for 30 minutes. Then, melt dark chocolate chips and dip date rolls in, covering them in chocolate. Refrigerate for another 30 minutes, until chocolate dries.
