Vegan Sloppy Joes

Growing up, lazy days called for my mom’s sloppy joes. It’s an easy, one-pot meal, but not the healthiest, so I decided to make a better-for-you version–vegan sloppy joes. I actually haven’t had sloppy joes since middle school, so I’m not sure what inspired me to make them all of a sudden. I only eat red meat on occasion and try to avoid it as much as possible because consuming less red meat is better for the environment and your health.

Vegan Sloppy Joes

In this recipe, I swapped ground beef for vegan ground meat from The Meatless Farm Co. You can use any BBQ sauce, but I really like Primal Kitchen’s Hawaiian-style BBQ sauce. It is organic and only contains 2g of added sugars vs. 14g in other leading brands.

I try to visit the grocery store less often because of COVID, so when you don’t want to go to the store, vegan sloppy joes are the perfect pantry recipe. As for the buns, I recommend Udi’s gluten-free however, these aren’t vegan. Canyon Bakehouse is another great option! Choose any bun that suits your dietary needs.

Vegan Sloppy Joes

Servings: 4

Ingredients:

  • 1 lb vegan ground "meat"
  • 1 tsp avocado oil
  • 1/2 yellow onion, chopped
  • 1/2 red bell pepper, chopped (any color works!)
  • 1/2 cup of bbq sauce (I used primal kitchen hawaiian bbq)
  • 2 tbsp ketchup (I use simply Heinz to avoid corn syrup)
  • 1/3 cup coconut sugar
  • 2 cloves garlic, minced
  • 2 tsp dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp chili powder
  • gluten-free/vegan buns

Instructions:

  1. Heat a medium sauce pan over medium heat.
  2. Whisk all ingredients for the sauce in a bowl (bbq sauce, ketchup, coconut sugar, garlic, Dijon mustard, pepper, salt, chili powder)
  3. Saute onions and bell peppers in avocado oil in sauce pan until onions are translucent.
  4. Add vegan meat to sauce pan and break it apart with a wooden spoon or spatula, cooking for a few minutes.
  5. Add sauce to vegan meat and stir until combined and cooked thoroughly, about 3 minutes.
  6. Serve on a bun with some chips or cole slaw!
