Gluten-Free Banana Bread Bars

I’ve been baking so much during the stay-at-home mandate! And everyone is making banana bread. I’m trying to find/create the best gluten-free and dairy-free banana bread, and this one turned out really well! I used components of a couple recipes I found, but was inspired by Kalefornia Kravings! Both my mom and sister loved it! These banana bread bars are gooey, moist, and delicious. They’re already half gone, and I just made them last night.

This recipe is gluten-free, and dairy-free/vegan (if you use dairy-free chocolate chips)! Instead of an egg, I made a flax egg for the first time. All you need is 1 tbsp of ground flax seed and 3 tbsp of water. Mix it together, let it set in the fridge for 15 minutes, and the consistency is just like that of an egg! Trust me, it doesn’t alter the taste of the banana bread bars after baking. For the flour, I used a combination of coconut and almond flour.

My favorite brand of chocolate chips is Guittard! They’re based in San Francisco and seriously have the highest quality chips for baking. I especially love their dark chocolate chips! They are not dairy-free, but they are gluten/nut-free!

Gluten-Free Banana Bread Bars

Servings: 12

Ingredients:

  • 1/4 cup coconut flour
  • 1/2 cup almond flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 bananas, mashed
  • 1/3 cup coconut sugar
  • 1 tsp vanilla
  • 1 flax egg
  • 1/4 cup almond butter
  • 2/3 cup chocolate chips (use dairy-free to make it vegan)

Instructions:

  1. Preheat oven to 350º.
  2. Mix dry ingredients (flours, cinnamon, baking soda, salt) together in a small bowl.
  3. In a medium bowl, combine wet ingredients (bananas, coconut sugar, vanilla, flax egg, almond butter).
  4. To make flax egg, mix 1 tbsp ground flax seeds and 3 tbsp of water. Let sit in fridge for 15 minutes.
  5. Add dry ingredients to wet ingredients and mix.
  6. Stir in chocolate chips.
  7. Place batter in 8x8 pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool before serving.
