Gluten/Dairy-Free Breakfast Sandwich
With all this time on my hands at home and my classes not starting until 10AM and 12:30PM, I’ve had more time to cook in the kitchen. I took a break from my usual yogurt bowl or avocado toast and decided to make a breakfast sandwich! The best part…it’s both gluten and dairy-free!
My absolute favorite gluten-free bread is the one from Trader Joe’s. It tastes just like real bread, has a long shelf life, and doesn’t need to be refrigerated. For this sandwich, I toasted some bread, fried an egg and vegan bacon from Hooray Foods, and topped it with avocado, almond cheese, and Trader Joe’s vegan kale and cashew pesto. This pesto is a life changer–I use it for so many different foods, like my sheet pan salmon with roasted broccoli!
I was surprised by how similar the vegan bacon tasted to real bacon! It sizzled and cooked in its own oil on the pan, and I made sure it got super crispy because I love crunchy bacon. Additionally, this bacon is gluten, dairy, and soy-free!
This isn’t really a recipe, it’s more of an assembly type of deal, but here ya go! Enjoy!
Gluten/Dairy-Free Breakfast Sandwich

Ingredients:
- 2 slices of gluten-free bread
- 2 strips of vegan bacon
- 1 egg
- vegan cheese (I used Trader Joe's almond cheese)
- vegan pesto
- 1/2 avocado
Instructions:
- Heat a pan and drizzle with olive oil. Crack an egg in a pan and flip when the whites become opaque. Cook for an additional 2 minutes.
- Place bacon in pan and cook 2-3 minutes on each side, or until desired crispiness.
- Toast bread.
- Assemble sandwich. I spread the pesto first, then added avocado, vegan cheese, egg, and lastly, bacon!
